  • 1 1/2 cups warm water Ensure it's about 110°F for yeast activation.
  • 2 tablespoons granulated sugar Adds sweetness to the dough.
  • 2 teaspoons salt
  • 1 packet active dry yeast (2 1/4 teaspoons) for rising the dough.
  • 4 cups all-purpose flour
  • 1/4 cup baking soda For boiling bath.
  • 1 large egg Beaten, for brushing on pretzels.
  • Coarse sea salt For sprinkling on pretzels.

Preparation
  1. In a large bowl, combine the warm water, granulated sugar, and salt. Sprinkle the yeast on top and let it sit for about 5 minutes until frothy.
  2. Add the flour to the yeast mixture and mix until a dough starts to form. Knead for about 5 minutes until smooth and elastic.
  3. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm spot for about 1 hour, or until it doubles in size.
Cooking
  1. Preheat air fryer to 450°F (230°C).
  2. Bring a large pot of water to a boil and add the baking soda.
  3. Roll the risen dough into ropes and cut into bite-sized pieces.
  4. Boil the pretzel bites in the baking soda water for about 30 seconds, then remove and place on a baking sheet lined with parchment.
  5. Brush each bite with beaten egg and sprinkle with coarse sea salt.
  6. Arrange in the air fryer basket in a single layer and bake for 12-15 minutes until golden brown.
  7. Let cool slightly before serving.

Notes

For best results, let water reach 110°F for yeast activation. Knead until smooth and allow the dough to rise in a warm spot. For variations, consider adding garlic powder or cheese seasoning to the dough.
