  • 4 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 tablespoon unsalted butter, melted
  • 3 tablespoons milk
  • 1/4 teaspoon vanilla extract
Cinnamon-Sugar Topping
  • 1/2 teaspoon cinnamon
  • 1 teaspoon sugar

Method
 

Preparation
  1. In a microwave-safe mug, stir together the flour, 2 tablespoons sugar, baking powder, and salt until evenly combined.
  2. Pour in the melted butter, milk, and vanilla. Stir well until you have a smooth, glossy batter.
  3. In a small bowl, mix the cinnamon with the 1 teaspoon sugar.
  4. Sprinkle the cinnamon-sugar evenly over the surface of the batter.
Cooking
  1. Microwave on high for about 1 minute and 30 seconds, until the cake is puffed up and looks set on top. If needed, microwave in 10-second bursts until set.
  2. Let it cool for about 1 minute before enjoying.

Notes

Use a mug with some headroom to prevent overflow. Stir well after adding baking powder for even rising. Don't over-microwave to prevent tough texture.
