  • 1 cup butter (softened) Ensure butter is at room temperature for smooth mixing.
  • 3/4 cup powdered sugar Adds sweetness to the shortbread.
  • 1/2 teaspoon vanilla extract Can be substituted with almond extract for a nutty flavor.
  • 2 cups all-purpose flour Best for creating the right crumb structure.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line two lightly colored baking sheets with parchment paper.
  2. In a stand mixer, combine the softened butter, powdered sugar, vanilla extract, and all-purpose flour. Mix on low speed until the mixture turns crumbly.
  3. Turn the dough out, form it into a ball, and roll it out between two sheets of parchment paper to a thickness of about 1/3 to 1/2 inch.
  4. Use a cookie cutter to cut out shapes and transfer them to the prepared baking sheets.
Baking
  1. Bake for 12-15 minutes, until the bottoms are barely golden brown.
  2. Allow the cookies to cool on the baking trays for about 5 minutes before transferring to cooling racks.

Notes

Store in an airtight container for up to 5 days or freeze for up to 3 months. Optional: Sprinkle sea salt on top before baking for a sweet-salty finish.
