Preparation
  1. Preheat the air fryer to 400°F (204°C).
  2. Trim the ends of the asparagus and cut the carrots into even-sized pieces for even cooking.
  3. In a mixing bowl, toss the asparagus and carrots with olive oil, minced garlic, salt, and pepper until everything is well-coated.
Cooking
  1. Spread the vegetables in a single layer in the air fryer basket to ensure proper roasting.
  2. Air fry for about 15-20 minutes, shaking the basket halfway through to promote even browning.
  3. You'll know they're done when they are tender and lightly caramelized.
  4. If desired, sprinkle with fresh lemon juice and grated Parmesan cheese just before serving.

Notes

Aim for uniform pieces when cutting the vegetables to ensure even cooking and caramelization. Allow the air fryer to preheat fully for a nice crisp on the vegetables. Don't overcrowd the air fryer basket; this helps achieve the perfect roasted texture.
