Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup small-curd cottage cheese Use small-curd for best results.
  • 2 large eggs If your melted butter is very hot, let it cool for a minute.
  • 3 tbsp melted butter

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Grease a baking sheet.
  2. In a large bowl, whisk together the flour, baking powder, and salt until evenly combined.
  3. In another bowl, stir together the cottage cheese, eggs, and melted butter until creamy with small curds.
Mixing
  1. Pour the wet mixture into the dry ingredients and fold gently until no dry flour is visible.
  2. Scoop about 2 tablespoons of dough per bun onto the prepared baking sheet.
Baking
  1. Bake for 15–20 minutes, until the tops are golden brown.
  2. Let cool for a few minutes before serving warm.

Notes

For consistent results, measure scoops around 2 tablespoons. Best served fresh, but can be stored in an airtight container in the refrigerator.
