Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  3. In another bowl, whisk the milk, egg, melted butter, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined, maintaining some lumps.
Assembly
  1. Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
  2. Sprinkle your chosen toppings over each cup of batter.
  3. Lightly press the toppings into the batter with your fingertips.
Baking
  1. Bake for 15-20 minutes, until tops are set and lightly golden, and a toothpick comes out clean.
  2. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, keep toppings small and avoid overfilling the muffin cups. Consider pressing toppings in to help them adhere while baking.
