  • 3 cups quick oats
For the Filling
  • 3/4 cup unsalted butter, softened
  • 2 ounces cream cheese, full-fat, brick style
  • 3-4 cups powdered sugar Adjust for desired thickness
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cream If needed for consistency

Method
 

Preparation
  1. Cream the butter and sugars together until light and fluffy.
  2. Beat in the molasses and vanilla until smooth.
  3. Add the eggs and mix until fully combined.
  4. Gently mix in the flour, cinnamon, baking soda, and salt until just combined.
  5. Stir in the quick oats until evenly distributed.
Baking
  1. Scoop dough onto baking sheets and bake until the edges are set and centers are slightly soft.
  2. Allow cookies to cool completely before filling.
Filling and Assembly
  1. Beat the softened butter and cream cheese until smooth.
  2. Add powdered sugar, vanilla, and salt, and mix until thick and creamy.
  3. Spread filling on one cookie and top with another to create a sandwich.

Notes

Cool the cookies completely before filling to avoid melting. Use similar-sized cookies for neat sandwiches.
