Ingredients

  • 2 cups Hungry Jack Pancake Mix Base for the pancakes
  • 1.5 cups water To mix with the pancake mix
Filling Ingredients
  • 1 lb breakfast sausage Cooked and crumbled
  • 1 cup shredded cheddar cheese For melting and flavor
  • 0.25 cup maple syrup Adds sweetness to the bites

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease a mini muffin pan well.
  2. Cook the breakfast sausage in a skillet over medium-high heat until browned. Drain excess grease and set aside.
Mixing Batter
  1. In a mixing bowl, combine Hungry Jack Pancake Mix and water, stirring gently until you have a smooth batter.
  2. Fold in the browned sausage, shredded cheddar, and maple syrup until evenly distributed.
Baking
  1. Spoon batter into each mini muffin cup, filling them about three-quarters full.
  2. Bake for 12-15 minutes, until the tops are golden brown.
Serving
  1. Let the bites cool for a minute, then remove from the pan and serve warm with additional maple syrup for dipping.

Notes

For best results, drain the sausage well to avoid greasy bites. Over-mixing the batter can lead to tough bites, so mix just until combined. Serve warm with maple syrup for the best flavor.
