Ingredients
  

For the potatoes
  • 2 large large potatoes, cubed Cut into uniform pieces for even cooking.
  • 1 tablespoon Olive oil
  • to taste Salt and pepper
For the meat and toppings
  • 1 lb ground beef or turkey Choose good-quality meat.
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 medium avocado, diced
  • 1 cup shredded cheese
  • sour cream for serving
  • lettuce for serving

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. In a mixing bowl, toss the cubed potatoes with olive oil, salt, and pepper until well coated.
  3. Spread the potatoes in a single layer in the air fryer basket. Cook for about 20 minutes, shaking the basket halfway through, until the potatoes are crispy and golden.
Cooking the meat
  1. While the potatoes are frying, heat a skillet over medium heat.
  2. Add the ground meat and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  3. Stir in the taco seasoning along with a splash of water, simmering for 3-4 minutes until well combined and heated through.
Assembly
  1. To assemble, start with a base of roasted potatoes in a serving bowl.
  2. Top with the seasoned meat, followed by black beans, corn, diced tomatoes, and diced avocado.
  3. Finish by sprinkling shredded cheese on top, adding a dollop of sour cream, and a handful of lettuce.
  4. Serve immediately for the best texture and flavor.

Notes

Ensure not to overcrowd the air fryer basket to achieve crispy potatoes. Customize toppings as desired.
