Ingredients
  

For the cookies
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened Make sure the butter is truly softened.
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons key lime juice
  • 1 teaspoon key lime zest Brings the 'freshly grated' citrus aroma.
  • 1 teaspoon vanilla extract
For the icing
  • 1 cup powdered sugar
  • to taste additional key lime juice Add slowly to achieve a thick drizzle.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking sheet.
  2. In a medium bowl, whisk together the flour, baking soda, and salt until evenly combined.
  3. In a separate bowl, beat the softened butter and granulated sugar until fluffy and pale in color.
  4. Mix in the egg, key lime juice, key lime zest, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each mound.
  7. Bake for 10-12 minutes until the edges are lightly golden and the centers look set.
  8. Cool the cookies on a wire rack.
  9. In a small bowl, mix powdered sugar with a bit of additional key lime juice until a drizzleable consistency is reached.
  10. Drizzle the icing over the cooled cookies and allow to set.

Notes

For the best citrus flavor, mix the zest into the wet ingredients thoroughly. Watch the edges of the cookies, not the tops, to determine doneness.
