  • 2 tablespoons honey
  • 1/2 cup fresh lemon juice Essential for sharp, fragrant acidity.
  • 2 cups sparkling water Provides light, fizzy texture.
  • 1 cup butterfly pea flower tea, brewed and cooled Must be chilled to maintain fizz.
  • Ice To fill the glass.
  • Lemon slices for garnish For an attractive presentation.

Preparation
  1. Brew and chill the tea. Make the butterfly pea flower tea and let it cool completely, then chill it until it’s cold to the touch.
  2. Mix the honey and lemon. In a serving glass, add the honey and fresh lemon juice. Stir until the honey is fully dissolved.
  3. Ice it well. Fill the glass with plenty of ice to keep the drink bright and preserve carbonation.
  4. Add the bubbles, then the color. Slowly pour in the sparkling water first, then pour the chilled butterfly pea tea down the side of the glass.
  5. Stir lightly (or keep it layered). Give it a gentle stir to blend while keeping a little of the ombré effect.
  6. Garnish and serve immediately. Add lemon slices and drink right away for the best fizz and visual effect.

Notes

For best results, chill the tea completely before assembling. Serve right away for maximum sparkle; this drink does not sit well once built. Adjust sweetness by taste with honey or lemon as desired.
