Preparation
- Preheat your oven to 400°F (200°C).
- Cut the potatoes into wedges and place them in a mixing bowl.
- Drizzle the potato wedges with olive oil, and season generously with salt and pepper. Toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet, ensuring they have enough space to crisp up.
- In the same mixing bowl, add the chicken breasts and pour in the honey BBQ sauce. Coat the chicken thoroughly with the sauce.
- Place the coated chicken on the baking sheet alongside the potatoes.
Cooking
- Bake in the preheated oven for 25-30 minutes. Flip both the chicken and potatoes halfway through to ensure even cooking.
- The chicken should reach an internal temperature of 165°F and the potatoes should be golden brown and tender.
Serving
- If desired, garnish with chopped parsley before serving.
Notes
For extra crispiness, ensure the potato wedges are in a single layer on the baking sheet. Use a meat thermometer to check for doneness in the chicken.
