  1. In a large mixing bowl, combine the corn, diced red bell pepper, cucumber, red onion, and chopped cilantro. Stir gently to mix the ingredients evenly.
  2. In a separate small bowl, mix the Greek yogurt with lime juice, salt, and pepper until creamy and well combined.
  3. Pour the yogurt dressing over the corn mixture and stir until everything is well coated in the dressing.
  4. Taste the salad and adjust the seasoning as needed. If you like, sprinkle with crumbled feta cheese and a dash of chili powder for extra flavor.
  5. Serve immediately or refrigerate the salad for at least 30 minutes to let the flavors meld. This salad can be enjoyed chilled or at room temperature.

For best results, use fresh ingredients. Store leftovers in an airtight container in the fridge for up to 2 days. Reserve delicate ingredients like avocado or feta until just before serving.
