- In a small pot, combine the coconut oil, maple syrup, and nut butter over medium heat. Stir continuously until the mixture is smooth and fully combined.
- Once you have a smooth mixture, add the cocoa powder and stir until there are no lumps remaining.
- Remove the pot from the heat and stir in the oats until the mixture becomes thick but still easily moldable.
- Using heaping tablespoons, drop the cookie mixture onto a cookie sheet lined with wax paper.
- Place the cookie sheet in the freezer for about 20 minutes, allowing the cookies to set properly.
- Once set, store the cookies in the refrigerator or freezer to enjoy later.
Notes
Make sure to stir continuously while heating to avoid burning the nut butter. For sweeter cookies, add a bit more maple syrup. You can also mix in nuts, seeds, chocolate chips, or dried fruit for added variety.
