Ingredients
  

For the Potatoes
  • 1.5 lbs baby potatoes, halved or quartered Quarter if larger to ensure even cooking.
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
For the Steak
  • 1.5 lbs sirloin steak, cut into bite-sized cubes Sirloin sears quickly and remains tender.
  • 1 tablespoon olive oil For searing the steak.
  • 2 tablespoons butter For searing and finishing.
  • 1 teaspoon dried Italian herbs
  • 5-6 cloves garlic, minced Add during final stage for flavor.

Method
 

Preparation
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the halved or quartered baby potatoes, season with salt, black pepper, and paprika.
  3. Cook for about 15 minutes, stirring occasionally, until golden with fork-tender centers, then transfer potatoes to a plate and set aside.
  4. While the potatoes rest, season the sirloin cubes with salt, black pepper, and dried Italian herbs.
Cooking
  1. In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter.
  2. Once the butter is melted, sear the steak cubes in a single layer for 2-3 minutes per side until nicely browned.
  3. Work in batches if needed to avoid crowding, which can trap steam and prevent browning.
Finishing
  1. Reduce heat to medium-low. Add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant.
  2. Return the potatoes to the skillet and toss so the garlic butter coats both the steak and potatoes.
  3. Cook for 1-2 minutes more to heat everything through.
  4. Sprinkle with fresh parsley and serve hot from the skillet.

Notes

Cut potatoes to a consistent size to ensure even cooking. Watch garlic closely to avoid burning.
