Ingredients
  

Vegetables
  • 2 cups Broccoli florets Fresh
  • 2 cups Carrots Fresh
  • 1 medium Red bell pepper Fresh
  • 1 medium Zucchini Fresh
  • 1 medium Red onion Fresh
  • 4 cloves Garlic (minced) Fresh
Seasonings and Oil
  • 1/4 cup Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • to taste Salt and pepper To enhance flavor
  • 2 tablespoons Balsamic vinegar Enhances sweetness
Optional Topping
  • 1/4 cup Parmesan cheese (grated) Add just before serving if desired

Method
 

Preparation
  1. Preheat your air fryer to 380°F (190°C) if required.
  2. In a large mixing bowl, combine the broccoli, carrots, red bell pepper, zucchini, red onion, and minced garlic. Toss them gently to ensure they are evenly coated with flavor.
  3. Drizzle the olive oil over the mixture and sprinkle with thyme, rosemary, salt, and pepper. Follow this with the balsamic vinegar; mix everything well to ensure every vegetable is well-seasoned.
  4. Place the vegetable mix in the air fryer basket in a single layer, allowing space for air to circulate around each piece.
Cooking
  1. Cook for about 12-15 minutes, shaking the basket halfway through to ensure even roasting. The veggies are done when they are tender (a fork should slide in easily) and have developed a light brown color.
  2. If desired, top with grated Parmesan cheese just before serving, letting it melt slightly from the heat of the vegetables.

Notes

Don't overcrowd the basket. Ensure the vegetables have space to roast evenly; cooking in batches may be necessary. Adjust cooking time based on your air fryer model.
