Preparation
- Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a food processor, blend the Medjool dates with the hot water until smooth and glossy.
- Add melted coconut oil, eggs, and vanilla extract to the date paste and blend until uniform.
- In a separate bowl, whisk together cocoa powder, baking powder, and salt.
- Add the dry mixture to the food processor and pulse until just combined.
- Scrape the batter into the prepared pan and spread evenly. If using, sprinkle dark chocolate chips on top.
Baking
- Bake for 20–25 minutes, until the edges are set and the center is still fudgy.
- Allow the brownies to cool completely in the pan before slicing.
Notes
To keep brownies dense and fudgy, pack the dates well and use hot water. Allow to cool completely for clean slices.
