Preparation
- Cook the pasta according to the package instructions until al dente, then drain, reserving 1 dl of the cooking water.
- Sauté the onion in a pan over medium heat until it becomes translucent, about 3-5 minutes.
- Add cherry tomatoes and paprika to the pan; cook until the tomatoes soften and burst, approximately 2-3 minutes.
- Stir in oregano, salt, and tomato paste, allowing the mixture to cook for another minute, blending the flavors.
- Pour in the heavy cream and reserved cooking water, stirring to create a smooth sauce. Allow the mixture to simmer for about 2-3 minutes until it slightly thickens.
- Add the cooked pasta to the sauce, mixing well to ensure it is coated evenly.
- Serve topped with Parmesan cheese and fresh basil, garnishing generously for that delightful finish.
Notes
For best results, do not overcook the pasta; it should have a little bite left. Freshly grated Parmesan enhances the flavor. Consider adding a splash of white wine or lemon juice for an extra layer of flavor.
