  • 1 onion Sautéed until translucent
  • 2 dl heavy cream Rich base for the sauce
  • 1 dl cooking water Reserved from pasta cooking
  • 1 paprika Add color and flavor
  • 1 teaspoon oregano For seasoning
  • 1 teaspoon salt To taste
  • 2 teaspoons tomato paste Adds depth of flavor
  • 1 Parmesan cheese For topping
  • 300 g pasta Any type you prefer
  • 250 g cherry tomatoes For sweetness and color
  • to taste basil Fresh for topping

Method
 

Preparation
  1. Cook the pasta according to the package instructions until al dente, then drain, reserving 1 dl of the cooking water.
  2. Sauté the onion in a pan over medium heat until it becomes translucent, about 3-5 minutes.
  3. Add cherry tomatoes and paprika to the pan; cook until the tomatoes soften and burst, approximately 2-3 minutes.
  4. Stir in oregano, salt, and tomato paste, allowing the mixture to cook for another minute, blending the flavors.
  5. Pour in the heavy cream and reserved cooking water, stirring to create a smooth sauce. Allow the mixture to simmer for about 2-3 minutes until it slightly thickens.
  6. Add the cooked pasta to the sauce, mixing well to ensure it is coated evenly.
  7. Serve topped with Parmesan cheese and fresh basil, garnishing generously for that delightful finish.

Notes

For best results, do not overcook the pasta; it should have a little bite left. Freshly grated Parmesan enhances the flavor. Consider adding a splash of white wine or lemon juice for an extra layer of flavor.
