  • 1 cup Medjool Dates (pitted) Choose soft and sticky dates for the best texture.
  • 2 tablespoons Almond Butter (or sunflower seed butter for nut-free) Almond butter adds richness, sunflower seed butter can be used for nut-free.
  • 1 tablespoon Coconut Oil (melted) Helps firm up the mixture when chilled.
  • 1 cup Chocolate Chips (or chocolate bar, use dark chocolate for richer flavor) Dark chocolate gives a less sweet finish.

Preparation
  1. Pit and inspect the dates for any surprise pits, and ensure they are soft and sticky.
  2. Blend the dates, almond butter, and melted coconut oil until a thick, uniform paste forms.
  3. Press the mixture into an even layer in a lined baking dish.
  4. Melt chocolate chips until smooth and pour over the date layer.
  5. Chill until the chocolate is set, then slice into squares or rectangles.

Notes

For best results, use soft Medjool dates and ensure the chocolate doesn't get overheated during melting. These can be frozen for later enjoyment.
