Seasoning
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • optional Parmesan cheese or fresh herbs for garnish

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Chop the mixed vegetables into even-sized pieces.
  3. In a large bowl, toss the vegetables with olive oil, salt, pepper, garlic powder, and paprika until they are evenly coated.
Cooking
  1. Arrange the seasoned vegetables in the air fryer basket in a single layer.
  2. Cook for 15-20 minutes, shaking the basket halfway through.
  3. Once cooked, remove from the air fryer and garnish with Parmesan cheese or fresh herbs if desired.
  4. Serve immediately and enjoy the crunch!

Notes

For best results, ensure vegetables are cut to a similar size and do not overcrowd the air fryer basket. Allow leftovers to cool before storing.
