Preparation
  1. Preheat your air fryer to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg, vanilla extract, and buttermilk to the butter mixture, mixing until incorporated.
  5. Gradually blend the dry ingredients into the wet mixture until just combined; avoid over-mixing.
  6. Divide the dough in half, and color one half with pink gel food coloring and the other half with blue gel food coloring.
Cooking
  1. Using a cookie scoop, portion out the dough, combining small amounts of each color to create a marbled effect.
  2. Place the dough portions in a single layer in your air fryer basket.
  3. Air fry the cookies for about 10-12 minutes, or until edges are golden and centers are slightly soft.
  4. Allow the cookies to cool for a few minutes in the air fryer before transferring them to a wire rack to cool completely.

Notes

For best results, ensure butter is at room temperature. Chill the dough for enhanced flavor and structure. Monitor closely towards the end of cooking to avoid overcooking.
