Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly coat it with cooking spray.
  2. In a large bowl, combine the cottage cheese and panko breadcrumbs. Stir until the mixture is cohesive and no dry crumbs remain.
  3. Scoop about 1 tablespoon of the mixture and form it into a tot shape using your hands. Place on the prepared baking sheet. Repeat with remaining mixture.
Baking
  1. Bake for 25–30 minutes, flipping the tots halfway through until they are golden brown and crisp.
  2. Let the tots cool on the pan for a few minutes before serving.

Notes

For best results, test the mixture's texture by forming one tot before shaping the entire batch. Adjust breadcrumbs as needed. Serve warm for the best contrast between crispy outside and creamy inside.
