Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a second bowl, whisk together the melted butter, milk, eggs, and vanilla until glossy.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- In a small bowl, mix the brown sugar, rolled oats, and cinnamon for the crumble.
- Fill muffin cups halfway with batter, sprinkle on some crumble, top with more batter, and finish with additional crumble.
Baking
- Bake for 18–20 minutes until the tops are set and lightly toasted.
- Allow to cool for a few minutes in the pan before transferring to a wire rack.
Notes
Let muffins cool briefly but not too long in the pan to avoid steaming. Store at room temperature in a covered container.
