Dough Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed Cold butter is key for tender biscuits.
  • 3/4 cup milk Just enough to bring the dough together.
Cinnamon Sugar Coating
  • 1/2 cup granulated sugar For coating after baking.
  • 1 tablespoon ground cinnamon For a warm, aromatic finish.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, 1/4 cup sugar, and salt until evenly combined.
  3. Add the cold, cubed butter and cut it in until the mixture looks like coarse crumbs with some pea-sized bits.
  4. Pour in the milk and stir just until the dough comes together, being careful not to overmix.
  5. Turn the dough onto a lightly floured surface and knead gently 4–5 times to smooth it out.
  6. Roll the dough to about 1/2-inch thick and cut into bite-sized pieces.
  7. Place the pieces on the prepared baking sheet with space between them.
Baking
  1. Bake for 10–12 minutes until lightly golden on the tops and edges.
  2. While they bake, combine 1/2 cup sugar and 1 tablespoon cinnamon in a bowl.
  3. Remove biscuit bites from oven and toss them in the cinnamon sugar while still warm.
  4. Serve warm for the best texture and flavor.

Notes

Keep the butter cold to ensure a tender biscuit texture. Aim for an even 1/2-inch thickness for baking.
