Preparation
- Preheat your air fryer to 350°F (175°C) and line the basket with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Incorporate the mashed bananas, egg, and vanilla extract, mixing until the mixture is smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Optionally, fold in the chopped nuts or chocolate chips.
- Using a spoon or cookie scoop, drop spoonfuls of dough onto the lined air fryer basket, ensuring they are spaced about 2 inches apart.
Cooking
- Cook in the air fryer for 10-12 minutes, or until the edges are golden brown and the centers are softly set.
- Allow the cookies to cool in the basket for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to five days. For freezing, lay them on a baking sheet until firm, then transfer to a freezer-safe bag.
