Preparation
  1. Preheat your air fryer to 350°F (175°C) and line the basket with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Incorporate the mashed bananas, egg, and vanilla extract, mixing until the mixture is smooth.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Optionally, fold in the chopped nuts or chocolate chips.
  6. Using a spoon or cookie scoop, drop spoonfuls of dough onto the lined air fryer basket, ensuring they are spaced about 2 inches apart.
Cooking
  1. Cook in the air fryer for 10-12 minutes, or until the edges are golden brown and the centers are softly set.
  2. Allow the cookies to cool in the basket for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to five days. For freezing, lay them on a baking sheet until firm, then transfer to a freezer-safe bag.
