Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and brown sugar until smooth and glossy.
- Add the mashed bananas, egg, and vanilla to the mixture and combine until smooth.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips if using.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10–12 minutes, until edges are golden and centers are set but still soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, mash bananas until mostly smooth, and ensure butter is softened. Do not overbake to maintain chewiness.
