Delicious and easy cherry pie bars with a buttery, almond-scented crust, a thick layer of cherry pie filling, and a simple glaze.

Ingredients
  

For the crust and filling
  • 1 cup softened butter Should be truly softened.
  • 1 cup sugar Granulated sugar.
  • 2 large eggs, room temp Room temperature eggs work best.
  • 1 tsp almond extract Adds a cherry bakery aroma.
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 tsp salt
  • 1 21 oz can premium cherry pie filling Use a full can for a generous layer.
For the glaze
  • 1 cup confectioners’ sugar
  • 1 tsp almond extract
  • 0.5 tsp vanilla extract
  • as needed milk Use to thin the glaze.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare your baking pan.
  2. In a mixing bowl, cream together the softened butter and sugar until fluffy.
  3. Beat in the eggs, followed by the almond extract and vanilla until smooth.
  4. Mix in the flour and salt just until combined.
  5. Press half of the dough into the bottom of the prepared pan.
  6. Spread the cherry pie filling evenly over the dough.
  7. Dollop the remaining dough over the cherry filling.
Baking
  1. Bake for 35–40 minutes until the top is golden and set.
  2. Allow the bars to cool completely before glazing.
Glazing and Serving
  1. Mix the confectioners’ sugar, almond extract, vanilla, and milk to create a glaze.
  2. Drizzle the glaze over the cooled bars before slicing.

Notes

Use softened butter for better texture and stop mixing as soon as the flour is incorporated. Store the bars in an airtight container and refrigerate if necessary.
