Preparation
- Preheat your oven and line your baking pan with parchment, leaving a little overhang.
- In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until blended.
- Add cold butter pieces and cut them into the dry ingredients until you have a crumbly mixture.
- Add the egg and vanilla extract, mixing just until the crumbs start clumping.
- Press most of the mixture firmly into the bottom of the prepared pan to form the crust.
Filling
- In a second bowl, toss the blueberries with the white sugar, cornstarch, and lemon juice until lightly coated.
- Spread the blueberry mixture evenly over the crust and sprinkle the reserved crumb mixture over the top.
Baking
- Bake until the top is golden and the blueberry layer is visibly bubbling.
- Let the pan cool completely before slicing.
Notes
Keep the butter cold for the best texture. Let the bars cool completely for cleaner slices. Serve at room temperature or slightly warm.
