Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1/2 cup milk
  • 1 large egg
Fries and Toppings
  • 2 cups diced apples Dice small for even cooking
  • Oil for frying Use high smoke point oil
  • Powdered sugar for dusting Dust while warm for best results

Method

Preparation
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until evenly distributed.
  2. In a separate bowl, whisk the milk and egg until smooth.
  3. Pour the milk-and-egg mixture into the dry ingredients. Stir just until you no longer see dry flour; batter should be thick and a little lumpy.
  4. Fold in the diced apples until well incorporated.
Cooking
  1. Heat oil in a pan over medium heat until steady (not smoking).
  2. Drop spoonfuls of batter into the hot oil, ensuring they are not crowded. Fry until golden brown, about 2-3 minutes per side.
  3. Remove fritters and drain on paper towels. Dust while warm with powdered sugar.

Notes

For best results, dice apples small for quick cooking, stop mixing the batter early, and dust with powdered sugar while warm. Store leftovers in an airtight container at room temperature.
